Two years ago this week, I arrived as a volunteer nutritionist for USAID in Uganda for the first time.
I had so many questions in my mind.
Could we really make soy milk with beans straight from the substance farmers fields with no electricity? If so, would the villagers even like it? What would we do with the leftover in the cloth after we squeezed out the milk since they had no oven to bake it in? And could we really change the fact that they rarely gave soy to their kids?
I started FARM STEW with a simple message, treasure your seeds, soak them and boil them! Combine them with a rainbow array of vegetables! You will benefit more fully from the nutrition inside and your kids will love them!
Amazed women were shocked to find that inside the soybeans they've been growing for decades they could make milk and many other value-added products. I was amazed by how much potential there was in a country where 35% of the children are malnourished.
